This Easy 3-Ingredient Crockpot Salsa Chicken is the perfect weeknight dinner—simple, delicious, and ready with minimal effort. Just toss chicken, salsa, and taco seasoning in the slow cooker for a tender, flavorful meal that the whole family will love.

Ingredients

Scale
  • 1.5 to 2 pounds (680 to 900 grams) boneless, skinless chicken breasts
  • 1 ½ cups (360 ml) salsa (medium-heat chunky recommended)
  • 1 packet (2 to 3 tablespoons) taco seasoning

Instructions

  1. Place chicken breasts in a single layer in the bottom of a 4 to 6 quart crockpot.
  2. Sprinkle taco seasoning over the chicken and rub in lightly.
  3. Pour salsa over the top and spread evenly; do not stir.
  4. Cover and cook on low for 4 to 6 hours or on high for 2 to 3 hours, until chicken reaches an internal temperature of 165°F (74°C) and shreds easily.
  5. Turn off the crockpot or switch to warm. Shred the chicken with two forks directly in the pot, then stir to coat with the sauce.
  6. Serve immediately or keep warm for up to an hour.

Notes

For a thicker sauce, leave the lid off for the last 30 minutes of cooking. Use a slow cooker liner for easy cleanup. Shred the chicken while still warm for best results. This recipe freezes well for up to 3 months.
