A quick and fun bento box lunch featuring turkey pinwheels and colorful fruit skewers, perfect for school lunches, picnics, or snacks.

  • 6 large flour tortillas
  • 8 oz sliced deli turkey breast (low-sodium preferred)
  • 4 oz cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1 small cucumber, thinly sliced
  • 1 medium carrot, grated
  • 1 cup fresh spinach leaves
  • Optional: 2 tbsp honey mustard or ranch dressing
  • 1 cup strawberries, hulled and halved
  • 1 cup seedless grapes (red or green)
  • 1 cup pineapple chunks (fresh or canned in juice, drained)
  • 1 kiwi, peeled and sliced into rounds
  • Wooden or reusable skewers (6-8 inch length)

Instructions

  1. Wash all fresh produce thoroughly. Thinly slice the cucumber, grate the carrot, hull and halve the strawberries, slice the kiwi, and cut pineapple into bite-sized chunks. Set aside.
  2. In a small bowl, soften the cream cheese with a spatula until smooth. If desired, mix in honey mustard or ranch dressing for extra flavor.
  3. Lay one tortilla flat on a clean surface. Spread about 2 tablespoons of cream cheese mixture evenly over the tortilla, leaving about a ½-inch border around the edges.
  4. Layer 3-4 slices of turkey breast evenly over the cream cheese, then sprinkle 2 tablespoons of shredded cheddar cheese. Add a few spinach leaves, some cucumber slices, and a small handful of grated carrot. Distribute evenly but do not overstuff.
  5. Starting from one edge, carefully roll the tortilla into a tight log. Use a bit of cream cheese on the edge to seal if needed. Wrap each pinwheel in plastic wrap or parchment paper and chill in the fridge for 10-15 minutes.
  6. Remove the wrap and slice each roll into 1-inch thick pinwheels. Arrange neatly in your bento box or lunch container.
  7. Thread the prepared fruit onto skewers, alternating colors and shapes for visual appeal. Aim for 4-5 pieces of fruit per skewer.
  8. Place the turkey pinwheels and fruit skewers side by side in the lunchbox. Add any extra compartments with small servings of nuts, cheese cubes, or a dipping sauce if desired.
  9. Pack an ice pack if needed to keep everything fresh until lunchtime.

Notes

Soften cream cheese well before spreading to avoid tearing tortillas. Chill rolled pinwheels before slicing for clean cuts. Use firm fruits for skewers to avoid sogginess. Prep pinwheels the night before for convenience. Use serrated knife for slicing to prevent squished edges.
