  • 1/2 cup (113 g or 1 stick) unsalted butter
  • 3/4 cup (90 g) old-fashioned rolled oats
  • 1/2 cup (60 g) all-purpose flour
  • 1/2 cup (100 g) packed brown sugar
  • 1/2 cup (60 g) chopped pecans
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 375°F (190°C). Position the rack in the center of the oven.
  2. Brown the butter: Place the 1/2 cup of unsalted butter in a light-colored saucepan over medium heat. Melt completely, then continue cooking, swirling occasionally, until golden brown specks form and the butter smells nutty (about 5-7 minutes). Remove from heat immediately and pour into a heat-safe bowl.
  3. Prepare the apples: Peel and slice apples into 1/4-inch thick slices. Place in a large bowl and toss with lemon juice.
  4. Make the apple filling: Add granulated sugar, 2 tablespoons flour, 1 teaspoon cinnamon, 1/4 teaspoon nutmeg, and 1/4 teaspoon salt to the apples. Toss to coat evenly. Let sit for 5 minutes.
  5. Make the streusel topping: In a medium bowl, combine rolled oats, 1/2 cup flour, brown sugar, chopped pecans, 1/2 teaspoon cinnamon, and 1/4 teaspoon salt. Pour cooled brown butter and vanilla extract over dry ingredients. Stir until mixture comes together in clumps.
  6. Assemble the crisp: Pour apple mixture into a 9×13 inch baking dish or 10-inch cast iron skillet. Sprinkle streusel topping evenly over apples.
  7. Bake: Place dish on a baking sheet and bake for 35-40 minutes, until apples are bubbling and streusel is golden brown. If topping browns too quickly, tent with foil for the last 10 minutes.
  8. Cool slightly before serving: Let rest on a cooling rack for at least 15-20 minutes before serving.
