These easy buffalo chicken stuffed peppers are the perfect game day snackโ€”creamy, spicy, and mess-free. Made with rotisserie chicken, cream cheese, and buffalo sauce, they come together in about 35 minutes and disappear faster than chips and dip.

  • 4 large bell peppers (any color; red and yellow are sweeter)
  • 2 cups cooked chicken, shredded (rotisserie chicken works great)
  • 4 ounces cream cheese, softened
  • 1/2 cup buffalo wing sauce (preferably Frank’s RedHot)
  • 1/2 cup shredded cheddar cheese (sharp cheddar recommended)
  • 1/4 cup crumbled blue cheese (optional)
  • 2 green onions, sliced
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • Extra shredded cheddar cheese for topping (optional)
  • Fresh parsley or cilantro, chopped (optional)
  • Ranch or blue cheese dressing for dipping (optional)

Instructions

  1. Preheat your oven to 375ยฐF (190ยฐC).
  2. Prepare the bell peppers: Cut each pepper in half lengthwise from stem to tip. Scoop out the seeds and white membranes with a spoon. If the peppers wobble, trim a tiny slice off the bottom to make them flatโ€”but don’t cut through the pepper itself.
  3. Make the filling: In a medium mixing bowl, combine the shredded chicken, softened cream cheese, buffalo wing sauce, garlic powder, salt, and pepper. Mix until the cream cheese is fully incorporated and the mixture is creamy and cohesive.
  4. Stuff the peppers: Divide the chicken mixture evenly among the 8 pepper halves. Spoon it in and let it mound slightly on top.
  5. Top with cheese: Sprinkle the shredded cheddar cheese over each stuffed pepper. If using blue cheese crumbles, sprinkle those on top of the cheddar.
  6. Bake covered: Place the stuffed peppers in a baking dish. Add about 1/4 cup of water to the bottom of the dish. Cover tightly with aluminum foil. Bake for 20 minutes.
  7. Bake uncovered: Remove the foil and bake for another 10-15 minutes, until the peppers are tender and the cheese is melted and lightly browned.
  8. Garnish and serve: Remove from the oven and let sit for 2-3 minutes. Sprinkle with sliced green onions and fresh parsley or cilantro if using. Serve warm with ranch or blue cheese dressing on the side for dipping.

Notes

Let cream cheese sit out for 20 minutes to soften for easier mixing. Add water to the baking dish to create steam and keep peppers tender. For extra-soft peppers, microwave the pepper halves for 2 minutes before stuffing. To freeze, assemble without baking, wrap tightly, and bake from frozen at 375ยฐF for 35-40 minutes covered, then 10 minutes uncovered.
