This Easy Caramel Apple Cheesecake Dip with Toffee Bits is a creamy, indulgent dessert that comes together in just 5 minutes. Perfect for fall gatherings, it features a fluffy cheesecake base, gooey caramel, and crunchy toffee bits, served with fresh apple slices and graham crackers.

Ingredients

Scale
  • 8 ounces cream cheese, softened to room temperature
  • 1/2 cup powdered sugar, sifted
  • 1 teaspoon vanilla extract (pure)
  • 1/2 cup heavy cream, cold
  • 1/2 cup caramel sauce (thick, quality brand like Ghirardelli)
  • 1/4 cup toffee bits (Heath bits recommended)
  • Fresh apple slices (Granny Smith or Honeycrisp) for serving
  • Graham crackers or cinnamon sugar pita chips for serving
  • Optional: extra caramel drizzle and flaky sea salt for topping

Instructions

  1. Soften the cream cheese: Take the cream cheese out of the fridge about an hour before starting. It should be soft enough that a finger pressed into it leaves an indent. If in a rush, microwave in 10-second bursts until just softened (not melted).
  2. Whip the base: In a medium mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth and creamy, about 1 minute. Scrape down the sides with a spatula.
  3. Add sweetness: Add the powdered sugar and vanilla extract. Beat on low speed until combined, then increase to medium and beat for another minute until light and fluffy.
  4. Incorporate the cream: Slowly pour in the cold heavy cream while the mixer is running on low. Once all in, increase to medium-high and beat for 2-3 minutes until soft peaks form. The mixture should hold its shape and look billowy. Do not overbeat.
  5. Assemble the dip: Spread the cheesecake mixture evenly into a serving dish, creating a smooth surface about 1 to 1.5 inches thick.
  6. Add the caramel: Drizzle the caramel sauce over the top, spreading it around so every scoop gets some. Use the back of a spoon to swirl gently into the cheesecake layer for a marbled look.
  7. Top with toffee: Sprinkle the toffee bits evenly over the caramel layer. Press them in very lightly so they stick.
  8. Chill (optional but recommended): Refrigerate the dip for 15-20 minutes to firm up slightly and allow flavors to meld. Can be served immediately if in a hurry.
  9. Serve and enjoy: Arrange apple slices and graham crackers around the dip. Drizzle extra caramel and sprinkle flaky sea salt on top if desired.

Notes

Make sure cream cheese is fully softened to avoid lumps. Use a thick caramel sauce to prevent the dip from becoming watery. For best flavor, chill for 30 minutes before serving. To keep apple slices from browning, toss them in lemon juice or Sprite. This dip can be made up to 24 hours in advance; add caramel and toffee just before serving.
