Instructions

  1. Preheat your broiler to high and position the oven rack about 6 inches from the heat source (about 5 minutes).
  2. Finely chop one small yellow onion and a small bell pepper (3-5 minutes).
  3. Heat 1 tablespoon of vegetable oil or butter in a skillet over medium heat. Add onions and peppers, season with salt and pepper, and sauté for 5-7 minutes until soft and fragrant, stirring occasionally.
  4. Arrange hot dogs on a foil-lined baking sheet and broil for 4-5 minutes, turning halfway through, until lightly charred but not blackened.
  5. Slice buns open (not all the way through) and toast under the broiler for 1-2 minutes until just toasted.
  6. Place each broiled hot dog into a toasted bun. Spoon sautéed onions and peppers over the top. Add a spoonful of pickle relish, then drizzle with mustard and ketchup as desired.
  7. For extra indulgence, sprinkle shredded cheddar cheese on top and broil for an additional 1-2 minutes until melted.
