  • ⅓ cup (80ml) vegetable oil
  • 1 large egg, at room temperature
  • 1 teaspoon vanilla extract
  • 1 cup grated zucchini (about 1 medium), squeezed dry

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Grate the zucchini using the medium holes of a box grater. Do not peel.
  3. Squeeze out the moisture from the grated zucchini using a clean kitchen towel or paper towels until no more water drips out.
  4. In a large bowl, whisk together flour, baking soda, baking powder, salt, and 1 teaspoon cinnamon.
  5. In a separate small bowl, combine ½ cup sugar, vegetable oil, egg, and vanilla extract. Whisk until smooth and slightly thickened, about 30 seconds.
  6. Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in the squeezed zucchini gently.
  7. Make the cinnamon sugar coating by mixing the remaining ¼ cup sugar with 2 teaspoons cinnamon in a shallow bowl.
  8. Scoop dough into 1.5-tablespoon portions (about golf ball size). Roll each portion in the cinnamon sugar mixture to coat all sides. Place on prepared baking sheet, spacing 2 inches apart.
  9. Bake for 10-12 minutes, until edges are set and tops look slightly crackled. For softer cookies, bake 10 minutes; for crisper edges, bake 12 minutes.
  10. Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
