  • 2 large English cucumbers (or 3 medium garden cucumbers)
  • 1 teaspoon fine sea salt
  • 1/2 medium red onion, thinly sliced
  • 1 cup full-fat sour cream
  • 2 tablespoons white wine vinegar
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon granulated sugar
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 cup fresh dill, finely chopped
  • Extra fresh dill sprigs for garnish (optional)
  • Pinch of paprika for color (optional)
  • Thinly sliced radishes for extra crunch (optional)

Instructions

  1. Wash and dry cucumbers. If using English cucumbers, leave the skin on. Slice into thin rounds, about 1/8-inch thick (about 4 cups).
  2. Place sliced cucumbers in a large bowl and sprinkle with 1 teaspoon fine sea salt. Toss well to coat. Let sit at room temperature for 30 minutes.
  3. While cucumbers rest, slice red onion as thinly as possible. If sensitive to raw onion flavor, soak slices in ice water for 10 minutes, then drain and pat dry. Set aside.
  4. In a small bowl, whisk together sour cream, white wine vinegar, lemon juice, sugar, and black pepper. Stir in chopped dill. Taste and adjust seasoning.
  5. After 30 minutes, transfer salted cucumbers to a colander. Rinse quickly with cold water to remove excess salt. Shake well, then pat dry thoroughly with a clean kitchen towel or paper towels.
  6. In a clean, dry bowl, toss dried cucumbers with sliced red onion. Pour dressing over top and stir gently until every slice is coated.
  7. Cover bowl and refrigerate for at least 30 minutes before serving. Garnish with extra dill sprigs and a pinch of paprika if desired.

Don’t skip the salting step—it draws out moisture so the dressing stays thick. Pat cucumbers very dry after rinsing. Use full-fat sour cream for best texture. Let the salad rest in the fridge for at least 30 minutes before serving. Store leftovers in an airtight container for up to 2 days.
