  • 1 teaspoon pure vanilla extract
  • 1 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves (optional)
  • 1/2 teaspoon salt
  • 1 box (15.25 oz / 432 g) yellow or spice cake mix
  • 1/2 cup (115 g) unsalted butter, melted
  • 1 cup (120 g) chopped pecans, toasted

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease your 9×13 inch baking dish with butter or non-stick spray.
  2. In a mixing bowl, combine the pumpkin puree, evaporated milk, granulated sugar, eggs, vanilla extract, cinnamon, nutmeg, cloves, and salt. Whisk until smooth and creamy.
  3. Pour the pumpkin mixture evenly into the prepared baking dish and spread it out level.
  4. Sprinkle the dry cake mix evenly over the pumpkin layer without stirring.
  5. Drizzle the melted butter evenly over the cake mix layer.
  6. Sprinkle the toasted pecans evenly on top.
  7. Bake uncovered for 45-50 minutes, or until the top is golden brown and a toothpick inserted near the center comes out mostly clean with a few moist crumbs. Tent with foil halfway through baking if edges brown too fast.
  8. Let the cake cool for at least 15 minutes before serving.
