Tender, fall-apart chicken and perfectly cooked rice in a sweet and savory honey garlic sauce, all made in the slow cooker with minimal effort. This one-pot meal is perfect for busy weeknights and is sure to become a family favorite.

  • 1.5 pounds boneless, skinless chicken thighs (or chicken breasts)
  • 1/3 cup honey
  • 1/4 cup low-sodium soy sauce
  • 4 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil (optional)
  • 1/2 teaspoon red pepper flakes
  • 1 cup long-grain white rice (basmati or jasmine)
  • 1.5 cups low-sodium chicken broth
  • 1/2 cup water
  • 2 green onions, sliced (for garnish)
  • 1 tablespoon sesame seeds (for garnish)
  • Fresh cilantro or parsley (for garnish)

Instructions

  1. In a small bowl, whisk together the honey, soy sauce, minced garlic, tomato paste, rice vinegar, sesame oil, and red pepper flakes. Set aside.
  2. Trim any excess fat from the chicken thighs and pat them dry with paper towels. Place the chicken in the bottom of a 6-quart slow cooker in a single layer.
  3. Pour the sauce over the chicken, making sure each piece is coated. Cover and cook on HIGH for 2 hours or LOW for 3-4 hours, until the chicken is tender and easily shreddable.
  4. Carefully remove the chicken pieces to a plate. Pour the chicken broth and water into the slow cooker, then stir in the rice. Nestle the chicken back into the liquid, pushing it down so it’s mostly submerged.
  5. Cover and cook on HIGH for another 45 minutes to 1 hour, until the rice is tender and has absorbed most of the liquid. If the rice is still firm, add another 1/4 cup of broth and cook for 15 more minutes.
  6. Once the rice is done, shred the chicken right in the pot using two forks, or leave the thighs whole for a more rustic presentation.
  7. Garnish with sliced green onions, sesame seeds, and fresh herbs. Serve hot.

Notes

For best results, use chicken thighs as they stay juicier. If using chicken breasts, monitor cooking time to prevent drying out. Brown the chicken first for extra flavor. Use low-sodium soy sauce to control saltiness. Check rice at the 45-minute mark to avoid mushiness. Let chicken rest for 5 minutes before shredding.
