  • 1 cup (200 g) granulated sugar (or honey/agave syrup as a substitute)
  • 4 cups (950 ml) cold water
  • Ice cubes as needed
  • 1/8 teaspoon pinch of salt
  • Optional: zest of 1 lemon

Instructions

  1. Roll each lemon on the counter with your palm to soften it. Cut in half and juice using a citrus juicer or reamer until you have about 1 cup (240 ml) of fresh lemon juice. Remove any seeds.
  2. In a large pitcher, add 1 cup (200 g) of granulated sugar to the lemon juice. Stir vigorously until the sugar dissolves completely. For faster dissolving, dissolve sugar in Β½ cup warm water first, then add lemon juice and cold water.
  3. Pour 4 cups (950 ml) of cold water into the pitcher. Stir gently to combine. Taste and adjust sweetness or tartness by adding more sugar or water if needed.
  4. Stir in a tiny pinch (about 1/8 teaspoon) of salt and the zest of one lemon if using to enhance flavor.
  5. Add plenty of ice cubes to the pitcher or serve over ice in individual glasses. Garnish with lemon slices or fresh mint if desired.
  6. Optional: For pulp-free lemonade, strain through a fine mesh strainer before chilling.

Notes

Use room temperature lemons for easier juicing. Dissolve sugar in warm water first to speed up mixing. Adding a pinch of salt balances acidity and cuts bitterness. Lemonade tastes best within 24 hours of making. For a bubbly version, replace some or all cold water with sparkling water.
