Ingredients

Scale
  • 1216 thick pretzel rods (e.g., Snyder’s of Hanover or bakery-style)
  • 1 cup beer cheese dip (store-bought or homemade)
  • ¼ cup spicy brown mustard
  • ¼ cup honey mustard
  • 68 ounces Genoa salami, sliced
  • 46 ounces prosciutto, thinly sliced
  • 4 ounces pepperoni, sliced
  • 6 ounces sharp cheddar cheese, cubed
  • 4 ounces pepper Jack cheese, cubed
  • 4 ounces Gouda, sliced (smoked preferred)
  • 1 cup red or green grapes
  • ½ cup dill pickle spears or chips
  • 1 cup cherry tomatoes (optional)
  • ½ cup mixed olives (kalamata and green)
  • ½ cup smoked or salted almonds
  • Fresh rosemary sprigs (optional, for garnish)
  • Flaky sea salt (for sprinkling)

Instructions

  1. Place small bowls for dips on a large wooden board or serving platter (at least 12×16 inches). Fill one bowl with beer cheese dip, one with spicy brown mustard, and one with honey mustard.
  2. Arrange the pretzel rods in a fan pattern around the dip bowls, creating a sunburst effect. Leave some space between them.
  3. Cube the sharp cheddar and pepper Jack into ½-inch cubes. Slice the Gouda into thin triangles. Arrange the cheeses in clusters around the board, alternating colors and shapes.
  4. Fold the salami slices into quarters or roll into cylinders. Drape the prosciutto in loose ribbons. Scatter the pepperoni slices in a small pile. Distribute the meats around the board.
  5. Add the grapes in small clusters, dill pickles in a pile, cherry tomatoes scattered, olives in a small bowl or directly on the board, and almonds in little pockets.
  6. Sprinkle flaky sea salt over the pretzel rods. Add fresh rosemary sprigs for color. Serve immediately, or cover loosely with plastic wrap and refrigerate for up to 2 hours. Remove from fridge 15 minutes before serving to let cheese come to room temperature.

Notes

For best results, warm the pretzel rods in a 300°F oven for 3-4 minutes before serving. Use room temperature cheese for better flavor. Don’t overcrowd the board; leave negative space for easy grabbing. If making ahead, add pretzel rods just before serving to prevent sogginess.
