  • 16 cherry or grape tomatoes
  • 16 fresh basil leaves
  • 2 tablespoons extra virgin olive oil
  • 3 tablespoons balsamic glaze
  • Pinch of sea salt
  • Freshly ground black pepper, a few twists (optional)
  • 16 wooden or bamboo skewers (about 6 inches long)

Instructions

  1. Rinse the cherry tomatoes and basil leaves under cool water and pat dry with a kitchen towel. Drain the mozzarella balls thoroughly to avoid watery skewers.
  2. In a medium mixing bowl, gently toss the mozzarella balls, tomatoes, and basil leaves with 2 tablespoons of extra virgin olive oil, taking care not to bruise the basil.
  3. Thread one cherry tomato, one mozzarella ball, and one basil leaf onto each wooden skewer, starting with the tomato for a sturdy base, then the mozzarella, and fold the basil leaf to fit.
  4. Arrange the skewers on a serving platter and sprinkle with a pinch of sea salt and freshly ground black pepper.
  5. Drizzle the balsamic glaze evenly over the skewers using a spoon or squeeze bottle, being careful not to overdo it.
  6. Serve immediately or cover and refrigerate for up to 2 hours. Bring to room temperature before serving for best flavor.

Notes

If dairy-free, substitute mozzarella with firm tofu or vegan cheese. For a seasonal twist, swap tomatoes with peaches or watermelon. Lightly grill skewers for smoky flavor. Assemble no more than 2 hours ahead to keep basil fresh. Pat tomatoes dry if too juicy to avoid sogginess.
