  • 23 ripe but firm bananas
  • 6 ounces (170 grams) good-quality dark chocolate (60-70% cacao recommended)
  • 1 tablespoon coconut oil (optional)
  • Pinch of sea salt

Instructions

  1. Peel 2-3 ripe bananas and slice into Β½-inch (1.3 cm) thick rounds. Place slices on a parchment-lined baking sheet in a single layer and freeze for about 30 minutes to firm up.
  2. Chop 6 ounces (170 grams) of dark chocolate into small pieces. Combine with 1 tablespoon coconut oil in a microwave-safe bowl. Microwave in 20-second bursts, stirring well each time, until smooth. Alternatively, melt over a double boiler.
  3. Using tongs or a fork, dip each frozen banana slice into the melted chocolate, coating evenly. Let excess chocolate drip back into the bowl. Place coated banana back onto the parchment-lined tray.
  4. Sprinkle a tiny pinch of sea salt on each banana bite while the chocolate is still wet.
  5. Return the tray to the freezer and freeze completely for 1-2 hours until firm.
  6. Transfer frozen banana bites to an airtight container or freezer bag and keep frozen until ready to serve.
