  • 1 to 1.5 pounds salmon fillets, skinless, cut into 1.5-inch cubes
  • 4 tablespoons unsalted butter
  • 45 cloves garlic, minced
  • 2 tablespoons fresh lemon juice
  • ½ teaspoon fine sea salt
  • ¼ teaspoon freshly ground black pepper
  • ¼ teaspoon red pepper flakes (optional)
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon olive oil

Instructions

  1. Pat the salmon fillets dry with paper towels. Cut into 1.5-inch cubes. Season with salt and pepper on all sides.
  2. Mince the garlic and chop the parsley. Squeeze the lemon juice into a small bowl.
  3. Place a large skillet over medium-high heat. Add olive oil and heat until shimmering.
  4. Carefully place salmon cubes in the hot skillet in a single layer. Sear undisturbed for 2 minutes, then flip and cook for another 2-3 minutes until golden and just cooked through.
  5. Reduce heat to medium-low. Add butter to the pan. Once melted, add minced garlic and stir gently for 30-60 seconds until fragrant.
  6. Squeeze fresh lemon juice over the salmon. Sprinkle red pepper flakes if using. Toss gently to combine. Remove from heat immediately.
  7. Sprinkle chopped parsley over the top. Serve hot with extra garlic butter sauce spooned over.

Notes

Pat salmon dry for best sear. Don’t overcrowd the pan. Watch garlic closely to avoid burning. Serve immediately for best texture.
