A quick, easy, and budget-friendly banana bread recipe perfect for students and anyone looking for a moist, flavorful loaf made with simple pantry staples.

Ingredients

Scale
  • 3 ripe bananas, mashed
  • 1/3 cup vegetable oil (or melted butter for richer taste)
  • 1 cup granulated sugar (can swap half for brown sugar)
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • Pinch of salt
  • 1 1/2 cups all-purpose flour
  • Optional: 1/2 cup chopped walnuts or chocolate chips

Instructions

  1. Preheat your oven to 350Β°F (175Β°C). Grease your 9×5-inch loaf pan with butter or spray to prevent sticking.
  2. Mash the bananas in your mixing bowl with a fork or masher until mostly smooth but still a bit chunky.
  3. Add the oil and mix well with the mashed bananas. Stir in the sugar and egg until combined.
  4. Mix in vanilla extract and a pinch of salt.
  5. Sprinkle baking soda over the batter and gently fold it in.
  6. Add the flour last, slowly incorporating it in batches, folding just until no streaks remain.
  7. If using walnuts or chocolate chips, fold them in gently now.
  8. Pour the batter into your prepared loaf pan, smoothing the top with a spatula. Fill about 3/4 full.
  9. Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean or with a few moist crumbs. Start checking at 50 minutes.
  10. Let the loaf cool in the pan for 10-15 minutes before transferring to a cooling rack.

Notes

Use ripe bananas with brown spots for best flavor and moisture. Avoid overmixing the batter to prevent a tough loaf. Let the bread cool before slicing to avoid crumbling. Optional mix-ins like walnuts or chocolate chips add extra indulgence. For gluten-free, substitute flour with a 1:1 gluten-free blend. You can replace oil with dairy-free yogurt or applesauce for a lighter loaf.
