This easy never-dry crockpot chicken breast recipe uses just five simple ingredients and minimal prep to deliver tender, juicy shredded chicken every time. Perfect for tacos, salads, sandwiches, or meal prep, it’s a set-it-and-forget-it weeknight lifesaver.

  • 1.5 to 2 pounds boneless skinless chicken breasts
  • 1/2 cup low-sodium chicken broth
  • 2 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon onion powder

Instructions

  1. Pat the chicken breasts dry with paper towels. Trim off any visible fat or silverskin. Place the chicken in the bottom of the slow cooker in a single layer.
  2. Sprinkle the salt, pepper, and onion powder evenly over both sides of the chicken. Rub it in. Add the minced garlic on top of the chicken.
  3. Pour the chicken broth around the chicken (not directly on top). Place the butter on top of the chicken breasts.
  4. Cover and cook on LOW for 4 to 6 hours, until the chicken reaches an internal temperature of 165°F in the thickest part. Do not cook on high.
  5. Turn off the slow cooker and let the chicken rest in the liquid for 10 minutes.
  6. Remove the chicken to a cutting board. Use two forks to shred it. Return the shredded chicken to the slow cooker with the juices. Toss to coat. Let sit for another 5 minutes before serving.

Notes

For best results, use chicken breasts of similar size. Do not lift the lid during cooking. For a dairy-free version, replace butter with olive oil. The chicken tastes even better the next day. Store leftovers in an airtight container with cooking liquid for up to 4 days, or freeze for up to 3 months.
