  • ½ cup (130g) creamy peanut butter
  • ⅓ cup (110g) honey
  • ¼ cup (45g) mini chocolate chips
  • 2 tablespoons (14g) ground flaxseed
  • 1 teaspoon vanilla extract
  • Pinch of salt (if peanut butter is unsalted)

Instructions

  1. Combine the dry ingredients: In a large mixing bowl, add 1 cup rolled oats, 2 tablespoons ground flaxseed, and a pinch of salt if using. Stir to distribute evenly.
  2. Add the wet ingredients: Add ½ cup creamy peanut butter, ⅓ cup honey, and 1 teaspoon vanilla extract directly to the bowl.
  3. Mix until combined: Stir with a rubber spatula or wooden spoon until a thick, cohesive dough forms. If too dry, add a teaspoon more honey; if too sticky, add a tablespoon more oats.
  4. Fold in the chocolate chips: Add ¼ cup mini chocolate chips and fold gently until evenly distributed.
  5. Chill the mixture (optional but recommended): Refrigerate the bowl for 15-20 minutes to make the dough firmer and easier to roll.
  6. Roll into balls: Line a baking sheet or large plate with parchment paper. Using a small cookie scoop or tablespoon, scoop portions and roll between your palms into 1-inch balls. You’ll get about 16-18 balls.
  7. Place on prepared sheet: Set each ball on the parchment-lined sheet, leaving a little space between them.
  8. Chill to set: Refrigerate the balls for at least 30 minutes to firm up completely. Transfer to an airtight container for storage.

Notes

For best texture, use creamy peanut butter (not chunky). Chill the dough before rolling for easier handling. These taste even better after a day or two in the fridge as flavors meld. Store in an airtight container in the refrigerator for up to 2 weeks, or freeze for up to 3 months.
