  • 1 tablespoon soy sauce (low-sodium if desired)
  • 1 teaspoon sriracha (optional)
  • 1/2 teaspoon sesame oil
  • 1/4 cup water
  • 1 green onion, sliced (for garnish)
  • 1 teaspoon sesame seeds (optional, for garnish)

Instructions

  1. Crush the ramen noodles inside their packages into bite-sized pieces. Set seasoning packets aside.
  2. Heat vegetable oil in a non-stick skillet over medium-high heat until shimmering (about 30 seconds).
  3. Add crushed noodles to the hot pan in an even layer. Toast for 1 minute without stirring, then stir and cook for another 30 seconds until golden and fragrant.
  4. Add frozen mixed vegetables and minced garlic. Stir for 1 minute until vegetables begin to thaw and coat in oil.
  5. Pour in water, soy sauce, sriracha (if using), and half of one seasoning packet. Stir well and bring to a gentle simmer.
  6. Reduce heat to medium-low, cover the pan with a lid or foil, and steam for 2-3 minutes until noodles are tender and most liquid is absorbed.
  7. Remove lid, stir, and drizzle with sesame oil. Toss to coat. Taste and adjust seasoning if needed.
  8. Transfer to a bowl, garnish with sliced green onion and sesame seeds. Serve hot.

For extra crispiness, after steaming, increase heat to medium-high and cook uncovered for 1 minute without stirring.
