  • 1/2 cup plain Greek yogurt
  • 2 tablespoons honey
  • 1 teaspoon pure vanilla extract
  • 1 cup fresh strawberries, hulled and quartered
  • 1 cup fresh blueberries
  • 1 teaspoon lemon zest
  • A few fresh mint leaves, finely chopped (optional)

Instructions

  1. Rinse 1 cup of strawberries and 1 cup of blueberries under cold water. Hull and quarter the strawberries. Pat all the berries dry gently with paper towels. (5 minutes)
  2. In a medium mixing bowl, combine 1 cup of small-curd cottage cheese and 1/2 cup of plain Greek yogurt. Transfer to a blender or food processor and blend until smooth but still slightly textured—about 30 seconds. (3 minutes)
  3. Stir in 2 tablespoons of honey and 1 teaspoon of pure vanilla extract into the blended mixture. Mix well to combine. (2 minutes)
  4. Use a fine grater or zester to add 1 teaspoon of fresh lemon zest. Mix gently. (1 minute)
  5. Carefully fold the prepared strawberries and blueberries into the dip. Be gentle to avoid crushing the berries. (2 minutes)
  6. Cover the bowl with plastic wrap or transfer to an airtight container. Refrigerate for at least 30 minutes to let the flavors meld and the dip thicken slightly. (30 minutes)
  7. Just before serving, sprinkle chopped fresh mint leaves over the top for a fresh aroma and vibrant contrast. Serve with extra strawberries, blueberries, or your favorite crackers. (2 minutes)

Notes

Use small-curd cottage cheese for best texture. If cottage cheese is watery, drain it before use. Blend until smooth but retain some texture to avoid a watery dip. Fresh berries are preferred over frozen for best flavor and texture. Chill dip for at least 30 minutes before serving. If too thick after chilling, stir in a tablespoon of milk or almond milk to loosen. Avoid overblending to prevent watery consistency.
