  • 2 tablespoons creamy peanut butter (natural, no added sugar or oils)
  • 1 ripe but firm banana, sliced about 1/4 inch thick
  • Honey or maple syrup (optional, about 1 teaspoon)
  • Pinch of cinnamon (optional)
  • Chia seeds or flaxseeds (optional)
  • Dark chocolate chips (optional)

Instructions

  1. Gather your ingredients: peanut butter, banana slices, tortillas, and any optional add-ins.
  2. Lay out a tortilla flat on a clean surface.
  3. Spread about 2 tablespoons of creamy peanut butter evenly over the entire surface, leaving a small border around the edges.
  4. Sprinkle a pinch of cinnamon or seeds if using.
  5. Arrange banana slices in a single layer over the peanut butter, overlapping slightly.
  6. Drizzle with a small amount of honey or maple syrup if desired.
  7. Roll the tortilla tightly from one edge to the other without pressing too hard.
  8. Heat a non-stick skillet over medium heat.
  9. Place the roll-up seam-side down in the skillet and cook for 1-2 minutes until the bottom is golden and slightly crisp.
  10. Turn the roll-up to toast the other sides, rotating every minute for about 4-5 minutes total until warmed through and lightly crisped.
  11. Remove from pan and let cool slightly before slicing into bite-sized pieces or halves.

Notes

Spread peanut butter when the tortilla is at room temperature for easier spreading. Warm tortillas briefly in the microwave to prevent cracking. Use medium heat to avoid burning the tortilla. For extra gooeyness, add a thin layer of cream cheese under the peanut butter. Slice bananas just before assembly if very ripe to avoid mushiness. Store leftovers wrapped tightly in the refrigerator for up to 2 days or freeze individually for longer storage.
