  • 1 ½ cups (135 g) rolled oats, finely ground
  • ½ cup (90 g) semisweet or dark chocolate chips
  • 3 tbsp (45 ml) honey or maple syrup
  • 1 tsp (5 ml) vanilla extract
  • 2 tbsp (20 g) chia seeds (optional)
  • ½ cup (30 g) protein powder, vanilla or unflavored (optional)
  • Pinch of salt

Instructions

  1. Grind the oats in a food processor until a coarse flour-like texture forms, about 20-30 seconds.
  2. In a large mixing bowl, combine peanut butter, honey or maple syrup, and vanilla extract. Stir until smooth.
  3. Add ground oats, protein powder (if using), chia seeds (if desired), and salt to the peanut butter mixture. Stir until evenly mixed and dough is sticky but firm.
  4. Fold in chocolate chips gently to keep them intact.
  5. Roll the mixture into 1-inch (2.5 cm) balls, about 15-18 balls. Wet hands or dust with oat flour if dough sticks.
  6. Place balls on a baking sheet or plate lined with parchment paper and chill in the fridge for at least 30 minutes.
  7. Serve chilled or store in an airtight container in the fridge for up to one week or freeze for longer storage.

Use natural peanut butter with no added sugar or salt for best flavor control. Grinding oats finely is key for texture and binding.
