Easy Preschool Apple Cinnamon Muffin Bites

Soft, sweet, and perfectly spiced mini muffin bites packed with real apple chunks and warm cinnamon. Made with simple, wholesome ingredients, they are perfect for little hands and come together in under 30 minutes.

  • 1 cup all-purpose flour (spooned and leveled)
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg (optional)
  • 1/4 teaspoon salt
  • 1 large egg (room temperature)
  • 1/3 cup maple syrup or honey
  • 1/3 cup unsweetened applesauce
  • 1/4 cup melted coconut oil or unsalted butter
  • 1 teaspoon vanilla extract
  • 1/2 cup finely diced apple (peeled, such as Honeycrisp or Fuji)
  • Optional: 2 tablespoons milk (any kind, if batter is too thick)
  • For topping: 1 tablespoon sugar mixed with 1/2 teaspoon cinnamon (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Spray a mini muffin tin generously with non-stick cooking spray or grease with butter.
  2. Dice the apple finely into pea-sized pieces after peeling.
  3. In a medium bowl, whisk together the dry ingredients: flour, baking powder, baking soda, cinnamon, nutmeg, and salt for about 15 seconds.
  4. In a large bowl, whisk together the wet ingredients: egg, maple syrup, applesauce, melted coconut oil, and vanilla extract until smooth and glossy.
  5. Pour the dry ingredients into the wet ingredients. Use a rubber spatula to fold gently until just combined; do not overmix. A few lumps are fine.
  6. Fold in the diced apple until evenly distributed. The batter will be thick and chunky.
  7. If the batter seems too thick, add 1-2 tablespoons of milk.
  8. Fill each mini muffin cup about 3/4 full using a small cookie scoop or two spoons.
  9. Sprinkle the tops with cinnamon sugar if desired.
  10. Bake for 10-12 minutes, or until a toothpick inserted into the center comes out clean and the tops are golden brown.
  11. Let the muffin bites cool in the pan for 5 minutes, then transfer to a wire cooling rack to cool completely.

Notes

Do not overmix the batter to keep muffins tender. Use room temperature ingredients to prevent coconut oil from solidifying. Grease the pan well to prevent sticking. Let cool in pan for exactly 5 minutes before removing. For regular-sized muffins, bake 18-20 minutes. Freeze for up to 3 months.
