  • 6 bone-in, skin-on chicken thighs (about 2 pounds or 900g)
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/3 cup honey (80ml)
  • 1/4 cup low-sodium soy sauce (60ml)
  • 4 cloves garlic, minced
  • 1 tablespoon rice vinegar (15ml)
  • 1 tablespoon sriracha or chili garlic sauce (15ml, optional)
  • 1 teaspoon sesame oil (5ml)
  • 1 tablespoon cornstarch mixed with 2 tablespoons water
  • Sesame seeds (optional, for garnish)
  • Chopped green onions (optional, for garnish)

Instructions

  1. Pat the chicken dry with paper towels. Season both sides generously with salt and pepper.
  2. Preheat a large skillet over medium-high heat and add the olive oil. Heat until shimmering, about 2 minutes.
  3. Sear the chicken skin-side down for 6-7 minutes without moving, until golden and crispy.
  4. Flip the chicken and cook for another 4-5 minutes until both sides are browned. Transfer to a plate.
  5. In a small bowl, whisk together honey, soy sauce, minced garlic, rice vinegar, sriracha (if using), and sesame oil.
  6. Pour the sauce into the hot pan. Let it simmer for 1 minute.
  7. Whisk the cornstarch slurry and pour it into the pan. Stir constantly until the sauce thickens, about 30 seconds.
  8. Return the chicken to the pan, skin side up. Spoon some sauce over each piece. Reduce heat to medium-low, cover, and simmer for 8-10 minutes.
  9. Remove the lid and let the sauce reduce for another 2-3 minutes, spooning over the chicken occasionally.
  10. Check for doneness: internal temperature should reach 165°F (74°C). Let rest in the pan off heat for 5 minutes before serving.
  11. Garnish with sesame seeds and chopped green onions if desired.

Notes

Pat the chicken dry for crispy skin. Do not walk away during sauce reduction as honey can burn quickly. Double the sauce if you like extra for rice or vegetables. Let the chicken rest for 5 minutes before serving for best texture.
