  • 4 tablespoons (57g / 4 tablespoons) unsalted butter, softened (can substitute coconut oil for dairy-free)
  • 1 teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Peel, core, and slice the apples into roughly ¼-inch thick pieces. Toss them in a bowl with lemon juice, ½ teaspoon cinnamon, and vanilla extract if using.
  3. In a separate bowl, combine rolled oats, almond flour, chopped nuts, 1 teaspoon cinnamon, nutmeg, and powdered stevia. Cut in the softened butter with your fingers or a pastry blender until the mixture resembles coarse crumbs. Add an extra tablespoon of butter if mixture is too dry.
  4. Spread the apple mixture evenly in an 8×8 inch (20×20 cm) baking dish. Sprinkle the oat topping evenly over the apples.
  5. Bake for 35-40 minutes until the topping is golden brown and crispy and the apple filling is bubbling. If topping browns too quickly, cover loosely with foil after 25 minutes.
  6. Let the apple crisp cool slightly for about 10 minutes before serving.
