  • 8 slices white bread or whole wheat bread
  • 4 tablespoons sunflower seed butter
  • 4 tablespoons strawberry jelly or grape jelly
  • 2 tablespoons unsalted butter, softened
  • Pinch of cinnamon (optional)

Instructions

  1. Lay out 4 slices of bread on a clean cutting board. Using a rolling pin or your hands, gently flatten each slice until it is about 1/4 inch thick.
  2. Spread about 1 tablespoon of sunflower seed butter on each of the 4 flattened bread slices, leaving a 1/2-inch border around the edges.
  3. Add about 1 tablespoon of jelly on top of the sunflower seed butter, spreading it gently within the same border.
  4. Place the remaining 4 slices of flattened bread on top of the filled slices. Press down gently around the edges to start forming the seal.
  5. Using a fork, crimp the edges all the way around each pocket. Press firmly with the tines to create a tight seal. Go around each pocket twice for extra security.
  6. Heat a non-stick skillet over medium heat. Add 1/2 tablespoon of butter and let it melt, swirling to coat the pan.
  7. Place 2 pockets in the pan, sealed side down first. Cook for 2-3 minutes until golden brown and crispy.
  8. Flip carefully using a spatula. Add another 1/2 tablespoon of butter to the pan if it looks dry. Cook the other side for another 2-3 minutes until golden brown.
  9. Transfer the cooked pockets to a cutting board and let them rest for 1 minute.
  10. Cut each pocket in half diagonally or straight down the middle. Serve warm or let them cool completely before packing for lunch.

Notes

Don’t skip the flattening step; it helps the bread seal better. Medium heat is key to avoid burning. Let pockets rest before cutting to prevent filling from spilling. Double crimp edges for extra security. Use softened butter to avoid tearing the bread.
