These easy turkey and cheese pinwheel roll-ups are a quick, no-fuss lunchbox solution made with simple ingredients like tortillas, turkey, cheese, and cream cheese. They hold together beautifully, are perfect for make-ahead meals, and are a crowd-pleaser for both kids and adults.

  • 4 large flour tortillas (10-inch)
  • 8 ounces cream cheese, softened
  • 1/2 pound thinly sliced deli turkey
  • 4 ounces thinly sliced provolone or Swiss cheese
  • 1/4 cup finely chopped fresh spinach (optional)
  • Pinch of salt and black pepper

Instructions

  1. Soften the cream cheese by letting it sit at room temperature for 30 minutes, or microwave for 15 seconds on 50% power.
  2. Lay a large tortilla flat on a cutting board. Ensure it is at room temperature.
  3. Spread about 2 tablespoons of softened cream cheese evenly over the entire tortilla, going all the way to the edges. The layer should be thin but complete, about 1/8 inch thick.
  4. Sprinkle a tiny pinch of salt and pepper over the cream cheese.
  5. Place 3 to 4 slices of turkey evenly over the cream cheese, overlapping slightly to cover the entire surface.
  6. Lay 2 to 3 slices of provolone or Swiss over the turkey. If using spinach, sprinkle it over the cheese now, making sure it is patted dry.
  7. Starting from one edge, roll the tortilla as tightly as possible without tearing, using your fingers to keep the filling tucked in. Press gently as you roll to seal the layers.
  8. Wrap the rolled tortilla tightly in plastic wrap, twisting the ends like a candy wrapper. Refrigerate for at least 30 minutes (1 hour is better).
  9. Unwrap the chilled roll and place it on a cutting board. Using a sharp serrated knife, slice the roll into 1-inch pieces using a gentle sawing motion. You should get about 8 to 10 pinwheels per tortilla.
  10. Arrange the pinwheels cut-side up in a lunchbox or serving dish.

Notes

For best results, use room temperature ingredients. Chill the rolled tortillas for at least 30 minutes to set the cream cheese. A serrated knife gives the cleanest cuts. These pinwheels taste even better the next day and can be frozen for up to 2 months.
