A quick and wholesome lunch wrap combining creamy avocado, lean turkey, and fresh veggies, ready in under 5 minutes.

Ingredients

Scale
  • Whole wheat or spinach tortilla wraps (8-10 inches)
  • 4 ounces (115g) thinly sliced turkey breast
  • 1 medium ripe avocado, peeled and pitted, mashed
  • 1 tablespoon fresh lime juice
  • A handful of baby spinach or mixed greens
  • 45 cherry tomatoes, halved (optional)
  • A few thin rings or 1 tablespoon (10g) minced red onion
  • 1 tablespoon mayonnaise or Greek yogurt
  • Salt and freshly ground black pepper to taste
  • Optional extras: crumbled feta or shredded cheese, sliced cucumbers, dash of hot sauce

Instructions

  1. Cut one ripe avocado in half, remove the pit, and scoop the flesh into a small bowl. Mash gently with a fork until mostly smooth but still a bit chunky. Add about 1 tablespoon (15 ml) fresh lime juice, a pinch of salt, and a little black pepper. Stir to combine.
  2. Rinse a handful of baby spinach or mixed greens and pat dry. Slice 4-5 cherry tomatoes in half and thinly slice a few rings of red onion (about 1 tablespoon or 10g).
  3. Place your tortilla flat on a clean plate or cutting board. Spread the mashed avocado mixture evenly over the center, leaving about a 1-inch border to avoid spillover when wrapping.
  4. Layer approximately 4 ounces (115g) of thinly sliced turkey breast evenly over the avocado. Fold or tear larger slices for better coverage if preferred.
  5. Scatter baby spinach, cherry tomatoes, and red onion over the turkey. Add any optional extras like crumbled feta or a drizzle of mayo or Greek yogurt (about 1 tablespoon/15 ml) for extra creaminess.
  6. Sprinkle a little more salt and pepper if desired. Fold one edge of the wrap over the filling, then fold in the sides, rolling tightly but gently to keep everything inside. Wrap tightly in parchment or plastic wrap if packing for later.
  7. Enjoy immediately or store in the fridge for up to 24 hours. Keep chilled until lunch time for best texture and freshness.

Notes

Warm the tortilla for 10-15 seconds in the microwave if it feels stiff to make folding easier. Use fresh lime juice to prevent avocado browning. Don’t over-mash the avocado to keep some texture. Wrap tightly to avoid sogginess if packing ahead.
