  • 4 large flour tortillas (10-inch burrito size)
  • 8 oz cream cheese, softened to room temperature
  • 1 packet (1 oz) dry ranch seasoning mix
  • 1/2 cup sour cream
  • 1 tablespoon pickle juice (optional)
  • 810 slices deli turkey breast
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup finely chopped romaine lettuce
  • 1/4 cup finely diced red bell pepper
  • 1/4 cup finely diced cucumber (seeded)
  • Salt and black pepper to taste

Instructions

  1. Make the ranch cream cheese spread: In a large mixing bowl, combine the softened cream cheese, sour cream, dry ranch seasoning, and pickle juice (if using). Beat with a hand mixer on medium speed until the mixture is completely smooth and fluffy, about 1-2 minutes. Taste and adjust with a pinch of salt and pepper if needed.
  2. Prep your veggies and turkey: Finely dice the bell pepper and cucumber (seed the cucumber first). Chop the romaine lettuce into small, thin strips. Set aside.
  3. Assemble the first tortilla: Lay one large flour tortilla flat on a cutting board. Using a rubber spatula, spread about 3 tablespoons of the ranch cream cheese mixture evenly over the entire surface of the tortilla, going all the way to the edges.
  4. Layer the fillings: Place 2-3 slices of deli turkey flat over the cream cheese, overlapping slightly. Sprinkle about 2 tablespoons of shredded cheddar cheese evenly over the turkey. Then scatter a tablespoon each of the chopped lettuce, bell pepper, and cucumber over the cheese. Press the veggies gently into the cream cheese.
  5. Roll it up tight: Starting at one end, carefully roll the tortilla as tightly as you can without tearing it. Use your fingers to tuck in the filling as you go. Once rolled, place seam side down on the cutting board.
  6. Wrap and chill: Tightly wrap the rolled tortilla in plastic wrap or parchment paper, twisting the ends like a candy wrapper. Place seam-side down on a baking sheet or plate. Repeat with remaining tortillas and filling. Refrigerate for at least 1 hour (or up to 8 hours).
  7. Slice and serve: After chilling, unwrap each roll and place on a clean cutting board. Using a sharp serrated knife, slice off the very ends (about 1/2 inch) to reveal the spiral. Then slice the remaining roll into 1-inch thick pinwheels. You should get about 8-10 pinwheels per tortilla.

For best results, ensure cream cheese is fully softened. Chilling is non-negotiable for clean slicing. Use a serrated knife for cutting. Wipe knife between cuts for neat slices. Can be made gluten-free with GF tortillas or dairy-free with dairy-free alternatives.
