Instructions

  1. Prepare the beans: If using dried beans, rinse 1 cup thoroughly and soak overnight in enough water to cover by at least 2 inches. Drain and rinse before cooking. If using canned, drain and rinse 2 cups to reduce sodium and improve taste.
  2. Sauté aromatics: Heat 2 tablespoons olive oil in a pot over medium heat. Add diced onion and sauté until translucent, about 5 minutes. Add minced garlic and cook for 1 minute until fragrant.
  3. Add vegetables and spices: Stir in diced bell pepper and cook for 3-4 minutes. Add ground cumin, smoked paprika, chili powder, dried oregano, and salt. Stir and toast spices for about 1 minute.
  4. Add beans and liquid: Pour in prepared beans and 2 cups vegetable broth or water. Add bay leaf. Bring to a gentle boil, then reduce heat to low and simmer uncovered for 30-40 minutes, stirring occasionally. Add more liquid if needed.
  5. Adjust seasoning and texture: About 10 minutes before finishing, mash a portion of the beans with a fork or immersion blender to thicken the sauce. Remove bay leaf. Add lime juice or vinegar to brighten flavors. Taste and adjust salt or spices as needed.
  6. Serve: Spoon beans over rice, toast, or enjoy as a stew. Garnish with fresh cilantro or parsley if desired.

If you forget to soak dried beans overnight, do a quick soak by boiling them for 2 minutes, then letting them sit covered for 1 hour before cooking.
