A quick and easy summer BBQ side dish featuring smoky grilled corn slathered in tangy cilantro lime butter, perfect for family gatherings and casual cookouts.

  • 4 ears fresh corn on the cob, husks removed
  • 4 tablespoons unsalted butter, softened
  • 2 tablespoons fresh cilantro, finely chopped (stems removed)
  • Juice of 1 lime
  • 1 teaspoon lime zest, freshly grated
  • 1 small garlic clove, minced
  • ½ teaspoon flaky sea salt
  • Pinch of freshly ground black pepper
  • Optional: pinch of smoked paprika or chili powder

Instructions

  1. Prepare the cilantro lime butter by combining softened unsalted butter, finely chopped fresh cilantro, lime juice, lime zest, minced garlic, salt, and pepper in a small bowl. Mix thoroughly until evenly incorporated.
  2. Preheat the grill to around 400°F (204°C). If using charcoal, wait until coals are glowing red with a light layer of ash, about 15 minutes.
  3. Husk the corn and remove all silk strands. Rinse under cold water and pat dry.
  4. Place the corn directly on the grill grates. Turn every 2-3 minutes with tongs to ensure even grilling on all sides. Grill for about 10-12 minutes or until golden char marks appear and kernels look tender and slightly shriveled.
  5. Remove the corn from the grill and immediately brush each ear generously with the cilantro lime butter so it melts into the kernels.
  6. For extra flavor, sprinkle more fresh cilantro or a pinch of flaky sea salt on top before serving.

Notes

Soften butter before mixing for easier spreading. Turn corn frequently to avoid burning. For vegan version, substitute butter with plant-based spread or coconut oil. Leftovers can be refrigerated up to 2 days and reheated gently on grill or oven. Avoid microwaving to maintain texture.
