  • 1 cup shredded cheddar cheese (about 100 g)
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • Fresh herbs (optional, such as chopped parsley or chives)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Whisk together the eggs and milk in a mixing bowl until fully combined and slightly frothy, about 1-2 minutes.
  3. Season the egg mixture with salt and freshly ground black pepper, then set aside.
  4. Heat the butter in your oven-safe skillet over medium heat until melted and foamy.
  5. Sauté the onions for 4-5 minutes until translucent and soft, stirring occasionally.
  6. Add the minced garlic and diced bell peppers to the pan. Cook for another 3-4 minutes until the peppers soften but still hold some bite.
  7. Stir in the baby spinach and cook until just wilted, about 2 minutes. Remove the pan from heat.
  8. Pour the egg mixture evenly over the sautéed veggies in the skillet. Tilt the pan gently to spread the eggs.
  9. Sprinkle the shredded cheddar cheese evenly over the top.
  10. Transfer the skillet to the preheated oven and bake for 20-25 minutes until puffed up, golden on top, and just set in the center.
  11. Check doneness by inserting a knife or toothpick in the center — it should come out clean.
  12. Remove from oven and let it rest for 5 minutes before slicing.
  13. Garnish with fresh herbs like parsley or chives, if using, and serve warm.
