  • 1 cup (96g) almond flour, finely ground
  • 1/3 cup (30g) vanilla whey protein powder (or plant-based protein powder for dairy-free)
  • 1 tsp baking powder
  • 1/2 tsp ground cinnamon (optional but recommended)
  • 3 large eggs, room temperature
  • 1/2 cup (120ml) unsweetened almond milk (or any milk of choice)
  • 1 tsp vanilla extract
  • Pinch of salt
  • 1/4 tsp baking soda
  • 1 tsp apple cider vinegar (or lemon juice as substitute)

Instructions

  1. In a medium bowl, whisk together almond flour, protein powder, baking powder, baking soda, cinnamon, and salt until evenly combined.
  2. In another bowl, beat eggs until slightly frothy (about 1-2 minutes). Add almond milk, vanilla extract, and apple cider vinegar. Whisk gently to combine.
  3. Pour the wet mixture into the dry ingredients. Stir gently until just combined; do not overmix. Batter should be thick but pourable. Add almond milk by tablespoon if too thick.
  4. Preheat a non-stick skillet or griddle over medium heat until a drop of water sizzles gently.
  5. Scoop about 1/4 cup (60ml) batter per pancake onto the skillet. Spread lightly if needed. Cook 2-3 minutes until bubbles form and edges look set.
  6. Flip carefully and cook another 2 minutes or until golden brown.
  7. Transfer pancakes to a plate and keep warm while cooking the rest. Serve warm.

Notes

Use fresh baking powder and baking soda for best fluffiness. Do not overmix batter to avoid gummy texture. Preheat pan properly and cook on medium heat. If batter thickens after sitting, stir in a splash of almond milk before cooking. Optional toppings include fresh berries, sugar-free syrup, or unsweetened Greek yogurt.
