Fresh Watermelon Feta Mint Salad Bites

A quick and easy summer appetizer combining juicy watermelon, tangy feta, and fresh mint for a refreshing and crowd-pleasing bite.

Ingredients

  • 4 cups seedless, firm, and ripe watermelon cut into 1-inch cubes
  • 1 cup crumbled feta cheese
  • About 20 fresh mint leaves, washed and patted dry
  • 2 tablespoons extra virgin olive oil
  • Juice of 1 lime (about 2 tablespoons)
  • Pinch or two of sea salt
  • Freshly cracked black pepper, to taste (optional)

Instructions

  1. Cut a seedless watermelon into a flat surface, then carefully cube it into roughly 1-inch pieces (about 4 cups or 600 grams).
  2. Measure out 1 cup (about 150 grams) of crumbled feta cheese. If the feta is too crumbly, gently press it into slightly bigger chunks.
  3. Rinse fresh mint leaves and pat dry carefully with a paper towel. Remove the leaves from the stems and keep whole leaves for garnish.
  4. In a small bowl, whisk together 2 tablespoons (30 ml) of extra virgin olive oil and juice of 1 lime (about 2 tablespoons or 30 ml). Add a pinch of sea salt and a few cracks of black pepper. Taste and adjust seasoning.
  5. Place the watermelon cubes in a medium bowl, drizzle half the dressing over them, and gently toss to coat without crushing the watermelon.
  6. Using toothpicks or small skewers, spear one watermelon cube, a small piece of feta, and a fresh mint leaf on top.
  7. Drizzle with a little of the remaining dressing right before serving and sprinkle a tiny pinch of sea salt over the assembled bites.
  8. Serve immediately or keep chilled for up to 30 minutes before serving to maintain freshness and prevent sogginess.

Notes

Assemble bites just before serving to avoid sogginess. Keep mint leaves dry and fresh. If watermelon is very juicy, drain excess liquid before tossing. For vegan option, substitute feta with firm tofu or vegan cheese.
