A quick and refreshing summer salad combining juicy watermelon, creamy feta, and fresh mint with a zesty lime dressing. Perfect for light meals, picnics, or as a side dish.

Ingredients

  • 4 cups seedless watermelon, cut into bite-sized cubes
  • 1 cup crumbled feta cheese
  • 1/4 cup fresh mint leaves, finely chopped or torn
  • Juice of 1 large lime (about 2 tablespoons)
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon honey or agave nectar (optional)
  • Pinch of sea salt
  • Freshly ground black pepper, a few cracks (optional)

Instructions

  1. Cut about 4 cups (600g) of seedless watermelon into bite-sized cubes. Drain briefly in a colander to remove excess juice.
  2. In a small bowl, whisk together lime juice, extra virgin olive oil, honey or agave nectar (if using), sea salt, and black pepper.
  3. Place the drained watermelon cubes in a large bowl. Add crumbled feta and fresh mint leaves.
  4. Pour the dressing over the salad and toss gently with a wooden spoon or salad tongs to combine without smashing the watermelon.
  5. Optional: Cover and chill the salad in the fridge for 15–20 minutes to allow flavors to meld.
  6. Before serving, toss gently again and adjust seasoning if needed.

Notes

Drain watermelon cubes well to prevent watery salad. Toss gently to avoid crushing watermelon. Add mint just before serving if preparing ahead. Optional toppings include toasted pine nuts or slivered almonds for crunch. Feta can be rinsed lightly to reduce saltiness if desired.
