A quick and refreshing summer salad combining juicy watermelon, tangy feta, fresh mint, and a sweet honey lime dressing. Perfect for hot days and easy gatherings.

  • 4 cups watermelon, cubed (seedless preferred)
  • 1 cup feta cheese, crumbled
  • 1/4 cup fresh mint leaves, chopped
  • 2 tablespoons honey
  • 2 tablespoons lime juice (from 1 large lime)
  • 2 tablespoons extra virgin olive oil
  • Pinch of salt
  • Freshly ground black pepper, to taste (optional)

Instructions

  1. Rinse the watermelon and pat dry. Cut into 1-inch cubes (about 4 cups).
  2. Rinse fresh mint leaves, pat dry, remove from stems, and chop finely (about 1/4 cup).
  3. In a small bowl or jar, combine honey, lime juice, olive oil, salt, and black pepper. Whisk or shake until emulsified and slightly creamy.
  4. In a mixing bowl, gently toss watermelon cubes with crumbled feta and chopped mint.
  5. Pour the honey lime dressing over the salad and toss carefully to coat evenly without breaking up the watermelon.
  6. Chill the salad in the refrigerator for 10-15 minutes before serving. Toss gently again and adjust seasoning if needed.

Notes

Avoid tossing the salad too vigorously to prevent watermelon from becoming mushy. Use raw honey and fresh lime juice for best flavor. Chill before serving for optimal refreshment. Can substitute feta with firm tofu or vegan cheese for dairy-free option.
