A refreshing and playful summer appetizer combining juicy star-shaped watermelon, creamy fresh mozzarella, and fragrant basil leaves, perfect for quick gatherings and warm-weather parties.

Ingredients

  • Seedless watermelon, cut into 2-inch star shapes
  • Fresh mozzarella balls (bocconcini or ciliegine)
  • Fresh basil leaves
  • Balsamic glaze (optional)
  • Extra virgin olive oil (optional)
  • Salt
  • Freshly ground black pepper

Instructions

  1. Chill the watermelon for at least 1 hour to keep it firm and easier to cut.
  2. Slice the watermelon into ½-inch thick slabs and use a star-shaped cookie cutter to cut out stars.
  3. Drain mozzarella balls in a colander for 5 minutes to remove excess moisture.
  4. Rinse and pat dry basil leaves carefully to avoid bruising.
  5. Assemble skewers by threading one basil leaf (folded if large), one mozzarella ball, and one watermelon star onto each wooden skewer.
  6. Arrange skewers on a serving platter, sprinkle lightly with salt and freshly ground black pepper.
  7. Drizzle with extra virgin olive oil and balsamic glaze if using, and optionally add a small basil leaf on top of each skewer.
  8. Serve immediately or chill for up to 2 hours before serving.

Notes

Chill watermelon before cutting to keep shapes intact and reduce juice dripping. Drain mozzarella well to avoid soggy skewers. Assemble skewers close to serving time for best freshness. Use paper towels under serving platter to catch any juice drips. For vegan version, substitute mozzarella with plant-based cheese or marinated tofu and skip balsamic glaze or use plant-based alternative.
