  • 1 packet (1 oz) taco seasoning
  • 1/4 cup (60ml) water
  • 1 can (15 oz / 425g) black beans, drained and rinsed
  • 1 large bag (1316 oz / 370-450g) restaurant-style tortilla chips
  • 2 cups (200g) shredded Mexican blend cheese
  • 1 cup (100g) shredded pepper jack cheese
  • 1/2 cup (120ml) pickled jalapeรฑos, drained
  • 1 medium tomato, diced
  • 1/4 cup (10g) fresh cilantro, chopped
  • 1/2 cup (120ml) sour cream
  • 1 avocado, diced or sliced
  • 1 lime, cut into wedges

Instructions

  1. Preheat your oven to 400ยฐF (200ยฐC). Position the oven rack in the middle.
  2. Cook the ground beef: Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the diced onion and cook for 2-3 minutes until softened. Add the ground beef, breaking it up with a spatula, and cook for 5-7 minutes until browned. Add the minced garlic and cook for 30 seconds. Sprinkle the taco seasoning over the beef, add 1/4 cup of water, and stir. Let it simmer for 2-3 minutes until the liquid thickens. Remove from heat and stir in the drained black beans.
  3. Pre-bake the chips: Spread the tortilla chips in a single, even layer on a half-sheet pan. Bake for 4-5 minutes until warm and slightly toasted.
  4. Layer the toppings: Remove the sheet pan from the oven. Spoon the seasoned ground beef and bean mixture evenly over the chips. Sprinkle the shredded Mexican blend cheese and pepper jack cheese evenly over the top. Dot the pickled jalapeรฑos around the pan.
  5. Bake until bubbly: Return the pan to the oven and bake for 8-10 minutes, until the cheese is fully melted and starting to bubble around the edges.
  6. Add fresh toppings: Remove from the oven and let it rest for 2 minutes. Sprinkle the diced tomato and chopped cilantro over the hot nachos. Add dollops of sour cream and scatter the diced avocado on top. Squeeze a lime wedge or two over everything.
