Instructions

  1. Rinse 1 cup (170 g) quinoa under cold water using a fine-mesh sieve to remove bitterness.
  2. Transfer quinoa to a medium saucepan, add 2 cups (475 ml) water and a pinch of salt. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until water is absorbed.
  3. Remove from heat and let quinoa sit covered for 5 minutes before fluffing with a fork.
  4. Pat dry 1 pound (450 g) chicken breasts and slice into thin strips or bite-sized pieces.
  5. In a bowl, toss chicken with juice of 1 lemon, 1 teaspoon dried oregano, ยฝ teaspoon garlic powder, ยฝ teaspoon salt, and ยผ teaspoon pepper. Let marinate briefly while prepping spinach.
  6. Heat 1 tablespoon olive oil in a non-stick skillet over medium-high heat.
  7. Add chicken pieces in a single layer and cook for 4-5 minutes per side until golden and cooked through (internal temperature 165ยฐF/74ยฐC). Remove from heat and let rest for a few minutes.
  8. Roughly chop 2 cups (60 g) baby spinach and toss lightly with a squeeze of lemon juice and a pinch of salt.
  9. Divide quinoa evenly between four bowls. Top each with seasoned spinach, cooked chicken strips, and about 2 tablespoons of tzatziki sauce.
  10. Garnish with additional lemon wedges or fresh herbs if desired.
