  • 1.5 pounds boneless, skinless chicken breast, cut into 1.5-inch cubes
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons freshly squeezed lemon juice
  • 3 cloves garlic, minced
  • 1 tablespoon smoked paprika
  • 1 teaspoon ground cumin
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon sea salt or kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 2 tablespoons fresh parsley, finely chopped (for garnish)
  • Wooden or metal skewers (soaked in water if wooden)

Instructions

  1. Rinse and pat dry the chicken breasts. Cut into 1.5-inch cubes and set aside.
  2. In a large mixing bowl, whisk together olive oil, lemon juice, minced garlic, smoked paprika, ground cumin, apple cider vinegar, Dijon mustard, salt, and black pepper to make the marinade.
  3. Add the chicken cubes to the marinade and toss until well-coated. Cover and refrigerate for at least 30 minutes, up to 2 hours.
  4. If using wooden skewers, soak them in water for 30 minutes to prevent burning.
  5. Thread the chicken cubes evenly onto the skewers, leaving space between pieces for heat circulation.
  6. Preheat grill or grill pan to medium-high heat (around 400°F/200°C).
  7. Grill the skewers for 4-5 minutes per side, about 12-15 minutes total, turning carefully with tongs. Cook until internal temperature reaches 165°F (74°C).
  8. Remove skewers from grill and let rest for 5 minutes.
  9. Sprinkle with chopped fresh parsley before serving.

Notes

Soak wooden skewers for at least 30 minutes before grilling to prevent burning. Use tongs to flip skewers to avoid piercing the meat and losing juices. Let the chicken rest after grilling to keep it juicy. If grilling is not possible, bake skewers at 425°F (220°C) for 15-20 minutes, flipping halfway through.
