  • 1 cup fresh chopped spinach
  • 1/2 cup diced bell peppers (mixed colors: red, yellow, or orange)
  • 1/3 cup halved cherry tomatoes
  • 2 tablespoons finely diced red onion
  • 1 clove garlic, minced
  • 1 tablespoon extra virgin olive oil
  • 1/4 teaspoon smoked paprika (optional)
  • Salt to taste
  • Freshly cracked black pepper to taste
  • 1 teaspoon fresh squeezed lemon juice
  • 1 tablespoon chopped fresh herbs (parsley or chives, optional)

Instructions

  1. Prep your veggies: wash and dice bell peppers, halve cherry tomatoes, chop spinach, finely dice red onion and garlic (about 5-7 minutes).
  2. Whisk the egg whites in a mixing bowl until frothy, about 30 seconds.
  3. Heat a non-stick skillet over medium heat and add 1 tablespoon olive oil; warm for about 1 minute until shimmering.
  4. Add diced red onion and minced garlic to the skillet; sauté for 2-3 minutes until fragrant and translucent.
  5. Add bell peppers and cherry tomatoes; cook for 3-4 minutes, stirring occasionally until softened but still crunchy.
  6. Add chopped spinach; stir for 1-2 minutes until wilted and bright green.
  7. Pour whisked egg whites evenly over the sautéed veggies; let sit undisturbed for 30 seconds, then gently stir and fold every 15 seconds until eggs are set but moist (3-4 minutes).
  8. Season with smoked paprika, salt, and pepper; fold gently.
  9. Turn off heat and squeeze fresh lemon juice over the scramble; garnish with chopped fresh herbs if desired.
  10. Serve immediately while hot.
