These chewy and nostalgic ABC Cookie Bars combine alphabet cereal and chocolate chips into a fun, quick treat perfect for first day of school or any busy morning.

  • 3/4 cup (150g) packed brown sugar
  • 1/2 cup (100g) granulated sugar
  • 2 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • 2 cups (240g) all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • about 3 cups (90g) alphabet cereal (preferably a sturdy brand like Kellogg’s ABCs)
  • 1 cup (170g) semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×13-inch pan with parchment paper, letting some overhang for easy lifting later.
  2. In a large bowl, beat 1 cup softened butter, 3/4 cup packed brown sugar, and 1/2 cup granulated sugar together until fluffy and light, about 3-4 minutes.
  3. Beat in 2 large eggs, one at a time, then mix in 2 teaspoons vanilla extract until just combined. Avoid overbeating.
  4. In another bowl, whisk together 2 cups all-purpose flour, 1 teaspoon baking soda, and 1/2 teaspoon salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing on low until just combined. Stop as soon as no streaks of flour remain.
  6. Using a rubber spatula, gently fold in about 3 cups alphabet cereal and 1 cup chocolate chips, being careful not to crush the cereal.
  7. Spread the batter evenly into the prepared pan, smoothing the top with a spatula.
  8. Bake for 25-30 minutes until edges are golden brown and the center is set but still soft. Test with a toothpick; expect some moist crumbs.
  9. Let the bars cool completely in the pan on a wire rack to firm up, about 30 minutes.
  10. Use the parchment paper overhang to lift bars from the pan and cut into squares or rectangles. Serve with milk or your favorite school lunch drink.
