  • 1/2 cup honey
  • 1/4 cup yellow mustard
  • 2 cloves garlic, minced
  • 1 tablespoon vegetable oil
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly cracked black pepper
  • 1 teaspoon smoked paprika (optional)

Instructions

  1. Pat the chicken thighs dry with paper towels to ensure crispy skin. Let them come to room temperature for 15 minutes.
  2. In a small bowl, whisk together honey, yellow mustard, minced garlic, vegetable oil, salt, and black pepper until smooth.
  3. Place chicken in a zip-top bag or shallow dish. Pour marinade over chicken, coating well. Refrigerate for at least 15 minutes or up to 4 hours.
  4. Preheat grill to medium indirect heat (375°F-400°F). Bank coals to one side or turn on only half the burners.
  5. Remove chicken from marinade, letting excess drip off. Place chicken skin-side down over direct heat for 5 minutes to crisp the skin.
  6. Move chicken to indirect heat side. Cover grill and cook for 15-20 minutes.
  7. Check for doneness; internal temperature should reach 165°F (74°C). Move to direct heat briefly if more color is needed.
  8. Transfer chicken to a plate and let rest for 5-10 minutes before serving.

Notes

Do not marinate longer than 4 hours as the acid in the mustard can break down the meat. Use indirect heat to prevent the honey from burning. Rest the chicken for 5-10 minutes to redistribute juices. For leftovers, reheat in an oven or air fryer at 350°F to maintain crispiness.
