  • 1 cup (245g) pumpkin puree (not pumpkin pie filling)
  • 1 cup (240ml) milk (any kind)
  • 2 large eggs, room temperature
  • 1/3 cup (80ml) maple syrup
  • 3 tablespoons (42g) coconut oil or butter, melted
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • Optional: 1/2 cup chocolate chips or 1/2 cup chopped pecans

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 12-cup muffin tin generously with cooking spray or butter. If using paper liners, spray them lightly as well.
  2. In a large mixing bowl, whisk together rolled oats, baking powder, pumpkin pie spice, and salt until well combined.
  3. In a separate bowl or liquid measuring cup, whisk together pumpkin puree, milk, eggs, maple syrup, melted coconut oil or butter, and vanilla extract until smooth and creamy.
  4. Pour the wet ingredients into the dry ingredients. Stir with a spatula or wooden spoon until just combined. Do not overmix. If using mix-ins, fold them in now.
  5. Let the batter sit for 5 minutes to allow the oats to absorb some liquid.
  6. Use an ice cream scoop or large spoon to divide the batter evenly among the 12 muffin cups, filling them almost to the top.
  7. Bake on the center rack for 20-25 minutes, or until the tops are set and golden brown, and a toothpick inserted into the center comes out clean or with a few moist crumbs.
  8. Let the oatmeal cups cool in the muffin tin for 5-10 minutes. Then run a butter knife around the edges and gently lift them out. Transfer to a cooling rack to cool completely.

Notes

Let the batter rest for 5 minutes before baking for better texture. Do not overbake; the cups should be just set in the center. They taste even better the next day as the flavors meld. For best results, use room temperature ingredients.
