  • 1 ½ cups (190g) all-purpose flour (or almond flour for gluten-free)
  • ¼ cup (25g) unsweetened cocoa powder (preferably Dutch-processed)
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • 1 cup (200g) granulated sugar (organic cane sugar preferred)
  • 2 large eggs, room temperature
  • ½ cup (120ml) vegetable oil or melted coconut oil
  • 1 teaspoon vanilla extract
  • 1 ½ cups (150g) grated zucchini, squeezed dry
  • 1 cup (175g) semi-sweet or dark chocolate chips
  • Optional: ½ cup chopped walnuts or pecans
  • Optional: Sprinkle of sea salt on top before baking

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan or line it with parchment paper.
  2. Grate the zucchini and squeeze out excess moisture using a clean kitchen towel or cheesecloth.
  3. In a large bowl, whisk together the flour, cocoa powder, baking soda, baking powder, and salt until evenly combined.
  4. In a separate bowl, beat the eggs with the sugar until smooth. Add the oil and vanilla extract, whisking until fully incorporated.
  5. Pour the wet ingredients into the dry ingredients and gently fold with a spatula until just combined.
  6. Fold in the grated zucchini and chocolate chips. If using nuts, fold them in as well.
  7. Scrape the batter into the prepared loaf pan and smooth the top. Sprinkle sea salt on top if desired.
  8. Bake for 50-60 minutes, starting to check at 50 minutes by inserting a toothpick into the center. It’s done when the toothpick comes out with a few moist crumbs.
  9. Remove from oven and let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

Squeeze zucchini well to avoid soggy bread. Use room temperature eggs for better batter consistency. Toss chocolate chips in flour before folding to prevent sinking. Let bread cool completely before slicing to avoid crumbling. Oven temperatures vary; use an oven thermometer for accuracy.
