  • For the Lemon Glaze:
  • 1 cup (120g) powdered sugar, sifted
  • 23 tablespoons fresh lemon juice
  • ยฝ teaspoon lemon zest (optional)

Instructions

  1. Preheat oven to 350ยฐF (175ยฐC). Lightly grease a 9×5-inch loaf pan or line with parchment paper.
  2. Grate zucchini to fill 1 ยฝ cups, then squeeze out excess moisture using a clean kitchen towel.
  3. In a large bowl, whisk together flour, baking powder, baking soda, salt, and poppy seeds.
  4. In a separate bowl, whisk sugar, vegetable oil, eggs, vanilla extract, lemon zest, and lemon juice until smooth.
  5. Slowly add dry ingredients to wet ingredients, stirring gently just until combined; do not overmix.
  6. Fold in the grated zucchini evenly into the batter.
  7. Pour batter into prepared loaf pan and smooth the top. Tap pan lightly to release air bubbles.
  8. Bake for 55-60 minutes, checking at 50 minutes with a toothpick for doneness.
  9. Cool bread in pan for 10 minutes, then transfer to a wire rack to cool completely.
  10. Prepare glaze by whisking powdered sugar, lemon juice, and optional lemon zest until smooth and pourable.
