  • 2 large eggs, room temperature

  • 1 teaspoon pure vanilla extract
  • Zest of 2 medium lemons (about 2 tablespoons)
  • 1 tablespoon fresh lemon juice
  • 1 ½ cups (about 2 medium) zucchini, grated and lightly squeezed
  • For the cream cheese glaze:
  • 4 ounces (115g) cream cheese, softened
  • ½ cup (60g) powdered sugar, sifted
  • 1 tablespoon fresh lemon juice
  • Optional: ½ teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan or line with parchment paper.
  2. Grate 1 ½ cups zucchini and gently squeeze out excess moisture.
  3. In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
  4. In a large bowl, beat sugar and eggs until pale and fluffy (about 2 minutes). Add oil, vanilla extract, lemon zest, and lemon juice; beat until combined.
  5. Gradually fold dry ingredients into wet mixture until just combined; avoid overmixing.
  6. Fold in grated zucchini evenly.
  7. Pour batter into prepared pan and smooth the top.
  8. Bake for 50-60 minutes, checking at 50 minutes with a toothpick for doneness.
  9. Cool bread in pan for 15 minutes, then transfer to a wire rack to cool completely.
  10. Prepare glaze by beating cream cheese, powdered sugar, lemon juice, and optional vanilla extract until smooth.
  11. Once bread is completely cool, spread or drizzle glaze over the top. Slice and serve.
