Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, combine sliced peaches, 1/2 cup granulated sugar, brown sugar, bourbon, and fresh lemon juice. Toss gently to coat and let sit for 10 minutes.
  3. Pour the peach mixture and syrup evenly into a 9×13-inch baking dish.
  4. In a separate bowl, whisk together flour, remaining 1/4 cup granulated sugar, baking powder, and salt.
  5. Add cold butter cubes and cut into the flour mixture using a pastry cutter or fork until coarse crumbs with pea-sized bits form.
  6. Pour in milk and stir gently until just combined; do not overmix. Dough will be slightly sticky.
  7. Drop biscuit dough by spoonfuls over the peach filling, leaving some gaps.
