Soft, chewy pretzel bites with a salty crust, served with a creamy, sharp beer cheese fondue. This recipe brings the taste of a Munich beer hall to your kitchen in about 90 minutes.

  • 1 ½ cups (355ml) warm water (about 110°F)
  • 2 ¼ teaspoons (one packet) active dry yeast
  • 2 tablespoons unsalted butter, melted
  • 1 tablespoon granulated sugar
  • 1 teaspoon salt
  • ½ cup baking soda (for the bath)
  • Coarse sea salt or pretzel salt, for sprinkling
  • 2 tablespoons melted butter (for brushing)
  • 8 ounces (225g) sharp cheddar cheese, shredded
  • 4 ounces (113g) cream cheese, softened
  • ¾ cup (177ml) beer (lager, pilsner, or Oktoberfest-style)
  • 1 tablespoon Dijon mustard
  • 1 clove garlic, minced
  • 1 teaspoon Worcestershire sauce
  • Salt and pepper to taste

Instructions

  1. Activate the yeast: In a large mixing bowl, combine warm water and sugar. Sprinkle yeast on top, stir gently, and let sit for 5 minutes until foamy.
  2. Make the dough: Add melted butter, salt, and 2 cups of flour to the yeast mixture. Stir until shaggy. Gradually add remaining 2 cups of flour, one cup at a time, until dough comes together. Turn onto a floured surface and knead for 6-8 minutes until smooth and elastic.
  3. First rise: Place dough in a lightly greased bowl, cover, and let rise in a warm spot for about 45 minutes until doubled in size.
  4. Prepare the baking soda bath: In a large pot, bring 8 cups of water to a boil. Carefully add ½ cup baking soda (it will bubble up). Reduce heat to a simmer.
  5. Shape the bites: Preheat oven to 425°F (220°C). Punch down dough and divide into 4 equal pieces. Roll each into a 1-inch thick rope, then cut into 1-inch pieces.
  6. The bath: Working in batches of 6-8, drop bites into simmering baking soda water. Boil for 30 seconds, flip, and boil another 30 seconds. Remove with a slotted spoon and place on a parchment-lined baking sheet, spacing 1 inch apart. Sprinkle with coarse salt while wet.
  7. Bake: Bake for 12-15 minutes until deep golden brown, rotating pan halfway through.
  8. Make the fondue: In a small saucepan over medium-low heat, warm beer and minced garlic until steaming (do not boil). Reduce heat to low. Add shredded cheddar a handful at a time, stirring constantly in a figure-eight motion until melted. Add cream cheese and stir until smooth. Stir in Dijon mustard and Worcestershire sauce. Season with salt and pepper. Keep warm over lowest heat.
  9. Finish and serve: Brush baked bites with melted butter. Let cool 2-3 minutes. Serve warm with beer cheese fondue.

Notes

Do not skip the baking soda bath—it gives pretzels their signature crust and flavor. Shred your own cheese for a smooth fondue. Keep fondue warm but not hot to prevent separation. For best results, let shaped bites rest in the fridge for 15 minutes before the bath.
