Instructions

Slowly add ice water, one tablespoon at a time, mixing gently until the dough just comes together. Avoid overmixing. Divide the dough in half, form into discs, wrap in plastic, and chill for at least 1 hour.
  2. Prepare the Apple Filling: Peel, core, and slice the apples into ¼-inch thick pieces. In a large bowl, toss apples with ¾ cup granulated sugar, ¼ cup brown sugar, 2 tbsp flour, cinnamon, nutmeg, and lemon juice until evenly coated. Set aside to macerate while you make the caramel.
  3. Make the Salted Caramel: In a medium saucepan over medium heat, melt ¾ cup granulated sugar, stirring constantly until it turns a deep amber color (about 5-7 minutes). Remove from heat and whisk in 3 tbsp butter until melted. Slowly add ½ cup warm heavy cream, stirring vigorously (mixture will bubble up). Stir in sea salt. Let cool slightly before using.
  4. Make the Streusel Topping: In a bowl, combine 1 cup flour, ½ cup brown sugar, cinnamon, and salt. Cut in ½ cup cold butter until mixture resembles coarse crumbs. Refrigerate until ready to use.
  5. Assemble the Pie: Preheat oven to 425°F (220°C). Roll out one dough disc on a floured surface to fit your pie dish. Transfer to dish and trim edges. Spoon in the apple filling, then drizzle the salted caramel evenly over the apples. Sprinkle the streusel topping generously over the caramel layer.
